Haha, you cant edit a .dll file, if you open it in notepad all you will get is a bunch of symbols.

Uhh, yes you can. And in notepad, you'll see the ascii representations of the bytes of the dll. So, technically, you can edit it with notepad.
Of course that would be ****ing stupid as using olly is kinda easier, but whatever.
